For a perfect steak, both the quality of the meat and the right preparation play an important role. Beef should be well-aged, dark red in color, and lightly marbled. It is just as important to let the pan and fat get very hot and to sear the steak first over high heat. This causes the proteins on the surface to coagulate, and the crust that forms seals in the steak’s juices (Maillard reaction). Depending on the thickness, the cooking time will vary – when turning, the steak should never be pierced so that the juices do not escape.

For even more flavor

If you want to infuse your barbecue food with flavor, marinades are a great choice – based on oil, vinegar, buttermilk, or honey, refined with herbs or spices. The meat is soaked in it or, depending on the consistency, rubbed with it.

A welcome bonus: it also becomes even more tender. Before grilling, be sure to let the marinade drain off well.

The correct cooking point

You can easily test the right doneness of a steak with your finger: If the meat feels like your lower lip when pressed lightly, it is "rare." If it feels a little firmer — with the tip of your nose as the point of comparison — it is "medium," and if it finally feels like your forehead, it is "well done."

Important: While beef steaks are often enjoyed "rare" or "medium," lighter meats such as pork, veal, or poultry, as well as minced steaks, must always be cooked through.
