Advantages of a pot lid

Why should you use a pot lid when cooking?

Using a lid offers several advantages:

  • even cooking temperature
  • faster cooking process
  • lower energy consumption

The pot lid not only affects the cooking result, but also has a positive effect on the required time and energy. Whenever the method of preparation allows it, Fissler therefore recommends cooking with the lid closed.

One exception is the preparation of broccoli, green beans etc. Here, for an appealing appearance, cooking without the pot lid is recommended. The reason is that when cooking green vegetables, organic acids develop in the cooking water and condensate. These convert the green pigment chlorophyll into pheophytin, which makes the vegetables appear gray-brown. If you do not use a lid while cooking, a large part of the acids can escape through the steam and the discoloration is delayed. A pinch of baking soda or baking powder also neutralizes the water and prevents the green chlorophyll from turning gray.
